Assistant Pastry Chef

Under the direction of the Pastry Chef, the Assistant Pastry Chef supervises Bakery hourly staff in daily overall kitchen operation for Bakery/Pastry Kitchen; works closely with the Pastry Chef for all scheduling, supervising, coordinating and training of Bakery staff; ensures that all baking staff follows all menus and recipes for Bakery/Pastry products; participates in planning, preparing and cooking of Bakery/Pastry items for all menus for all occasions including special functions and holidays, for all venues and for Casino as a whole.
Essential Duties & Responsibilities
- Maintains and ensures that recipes, flavor profiles, consistency in quality, appearance and production time frames are adhered to for all Bakery/Pastry items being produced and that all food items needed for production are available to staff as directed by the Pastry Chef.
- Ensure that all logs, requisitions and any other necessary paperwork are filled out reviewed and submitted in the proper form and time frame.
- Possesses strong management skills; performs periodic and annual reviews of all Bakery/Pastry staff under the direction of the Pastry Chef.
- Understand development of recipes, plating guides and menu cards.
- Schedules Bakery/Pastry staff within budgeted labor cost; approves vacation requests ensuring that staffing needs are met.
- Ensures safe working conditions are in place at all times for kitchen and food service staff; investigates and reports all employee injuries or accidents.
- Monitors all kitchen areas to ensure Health Department, Gaming, Casino, IHS, FDA and OSHA codes & policies are followed at all times; reports any violation of codes and policies immediately upon discovery; participates in all Gaming, IHS and all other inspections.
- Maintains acceptable attendance record; arrives in designated kitchen at scheduled time, in proper uniform and ready to work.
- Reports and corrects any employee injuries, accidents or possible unsafe work environment or health code issues to management immediate when identified.
- Perform any job responsibilities and or tasks deemed necessary by Pastry Chef and Executive Chef within the scope of this position and business needs of the department.
Education/Experience/Qualifications
- High School Diploma or GED required.
- Culinary degree from an accredited culinary institute required.
- College degree in related field preferred.
- Minimum five (5) years’ experience working in high-volume restaurant, hotel or food service establishment or management company at Sous Chef level or higher required.
- Management training and/or culinary education experience preferred.
- Possess a general knowledge of Bakery culinary operations.
- Ability to handle high volume restaurant Pastry/Baking production, high volume catering/banquet bakery/pastry production and expediting of Bakery/Pastry products during peak periods of business in all stated areas.
- Must have understanding of food cost, labor cost and other expenses relating to the Bakery.
- Understands corrective counseling methods and how to properly document any issues that arise with staff.
- Must possess advanced skill in hands–on staff training.
Certificates/Licenses/Registrations
- May be required to undergo and successfully pass a background investigation to obtain and maintain a Class “A” Gaming license issued by the San Manuel Tribal Gaming Commission.
- Must obtain and maintain a current Food Handler’s Card, ServSafe certificate and negative TB test.
