Cook
REQUIREMENTS:
- High School diploma or GED
- 1 year cook experience
- Have or obtain Food Handler’s Card
JOB DUTIES:
- Prepare meals in fast-paced environment.
- Follow recipes
Wait Staff: Servers
REQUIREMENTS:
- Restaurant or catering background
- A current Oregon Food Handler's Card and an OLCC Permit (have or obtain)
- Experience handling cash and understanding basic math
PREFERRED:
- Wine, alcohol and beer knowledge
JOB DUTIES:
- Demonstrate strong interpersonal skills
- Be directly responsible for the daily guest services on all company ships.
- Be directly responsible for all related styles of service, including, but not limited to, table side, banquet, and cocktailing.
- Ensure customer perceives high value of service provided and true customer satisfaction.
- Be involved in all facets of customer services and amenities provided to guests.
- Adhere to side work, set-up and close down, procedures and ensures ship cleanliness.
- Maintain a high level of customer service.
- Adhere to uniform policy and tip policy, monitor product costs, and initiate teamwork.
- Communicate with the Cruise Director pertaining to service and photography.
- Assist the Bar Manager in other duties to enhance the whole company operation.
- Carry, push or pull up to 50 pounds.
- Repeatedly bend, lift, climb stairs, push wheelchairs and stand for extended periods.
- Work in a fast-paced environment as a team player.
HOURS:
- Flexible schedule, with emphasis on evenings, weekends, and holidays.
Dishwasher
REQUIREMENTS:
- A current Oregon Food Handler's Card (have or obtain at: ora.org)
JOB DUTIES:
- Maintain proper sanitation standards regarding food, personnel and workplace as described by the Health department.
- Maintain sufficient supply of dishes, utensils, platters etc throughout the shift.
- Constantly work to minimize the amount of dirty dishware in the kitchen.
- Participate in daily cleaning tasks as assigned by supervisor.
- Work closely with line chefs and Sous chef to ensure proper functionality of dish machine.
- Continuously change the water in the dish machine on a regular 2 hour basis.
- With every water change, clean filters and properly break the machine down at the end of the night.
- Maintain dish area in an organized manner, so as to keep up with the kitchen and inform supervisor of the need for additional chemicals.
- Periodically check garbage and cardboard and promptly remove both to the loading dock when needed.
- Sort silverware regularly
- Ensure the recyclable materials from your area of business are taken to the correct location and placed in the appropriate containers.
- Ensure that all staff keep safe and organized garbage and recycling area by breaking down boxes, separating glass from other recyclables, and place all material in the appropriately labeled bins.
- Lift 50 lbs.
- Bend, twist and kneel.
- Work on feet, stand and walk for up to 8 hours at a time.
- Keep up with the pace of the department demands of the position.
- Perform other related duties as directed
Banquet Setup/Servers
REQUIREMENTS:
- A current Oregon Food Handler's Card and an OLCC Permit (have or obtain)
- Experience: Varies, depending on the type of restaurant and level of service required. A knowledge of the sequent of service and dining room procedures, generally involving a minimum of one (1) year. Must be customer sensitive and possess a sense of timing so that different courses may be served at the proper time.
- Physical: Must be able to stand and exert fast-paced mobility for periods of up to four (4) hours in length. Must have good sense of balance, be able to bend and kneel and have the ability to lift bus pans and trays frequently weighing up to 40 pounds.
- Language: Ability to read, write, speak and understand English. Must be able to speak clearly and listen attentively to guests and other employees.
JOB DUTIES:
- Obtains room assignment from captain or manager.
- Sets up all necessary silverware, glassware, etc.
- Prepares back-of-the-house for upcoming function as outlined by captain/manager.
- Serves food and beverage as outlines by captain/manager.
- Observes diners to ensure that guests are satisfied with the food and service, to respond to any additional requests, and to determine when the meal has been completed.
- Re-sets or breaks down tables as directed by captain/manager.
